Woah now, I think I found a solution for unripe avocados + mango. this carpaccio. thin slices of mango + avocado overlap with a dressing of olive oil, lime juice + salt.

It couldn't be simpler + you don't have to wait around for your fruit to ripen. Actually it's preferred if your mango + avocado isn't totally soft as they'll fall apart when you try to thinly slice them. The key to thinly slicing everything is to use a vegetable peeler. yeah, it's that easy.

This avocado + mango carpaccio is fresh, light, but most importantly simple. I particularly like this after a day of eating tons of fried/icky foods. You should make this a regular treat though!

  • 1 mango

  • 1 avocado

  • 1/4 lime, juice

  • Olive oil

  • Flakey salt

  1. Start by thinly slicing the mango and avocado. Slightly underripe ones are actually ideal for this recipe since we'll be slicing them very thin. Peel your mango + avocado. Using a vegetable peeler, thinly shave off slices from both the mango + avocado.

  2. Layer the mango + avocado on a platter, alternating between the two. Top with the lime juice + a drizzle of olive oil. Sprinkle some flakey salt on top. Enjoy right away or chilled.
