Caramel corn ice cream sundae
It's Valentine's Day. You just made a fabulous dinner for two in under an hour, but now your sweet tooth is kicking in.
And by kicking in, it's time to eat sweets. Your sweet tooth never really goes away.
Nothing is easier than an ice cream sundae because they come together super quickly. They are also super sharable, which on a day like Valentine's Day, is very romantic. This is less a recipe, but just a few suggestions for building a caramel corn sundae. Let's get started, ok?
First you have to start with the base, ice cream. I reallllly like butter pecan here, but you can't go wrong with vanilla bean or chocolate almond too. Scoop tons of ice cream into a large glass fluted dish.
Then add popcorn. YES, popcorn! It is a super strange addition, but something about popcorn feels right in this sundae. It adds a bit of crunch + saltiness. You'll just need a handful. I would not use a buttery popcorn, but something with salt. Top the ice cream with the popcorn.
Now it's time for the caramel. You can use stuff from the jar,or just quickly make your own. Combine 1/2 cup brown sugar, 2 tablespoons butter + 3 tablespoons heavy cream in a saucepan. Allow the sugar to melt + warm through. Pour this (but maybe not ALL of it) on top of your sundae.
Now it's time for whipped cream. The canned stuff is fine, just make sure it almost topples over the dish.
And the final touch? Crushed amaretto cookies. This makes the sundae, so don't even think about skipping it. These cookies are out of control crunchy.
And tada! Dig in with your Mr. or Ms. Lovely, just don't fight too much over those amaretto cookie pieces. Have the best Val- or Galentine's Day, but make sure you save room for plenty of ice cream. Ha, that's never a problem!
