Chocolate cherry ice cream sandwiches
Ahhh...love is in the air. Don't you smell it? Or is it just all the commercials I'm watching?
Valentine's Day is the perfect excuse to bake and eat everything sweet. And I love to relish the excuse! Good thing these chocolate cherry ice cream sandwiches are so darn easy.
They're truly simple, with no baking or ice cream churning required. It's as easy as making rice cereal treats, just like the ones you asked for growing up. Except, this is Valentine's Day so they should definitely be made of Cocoa Krispies. Fill 'em with whatever flavor ice cream you'd like, but I love the taste of cherry vanilla with the chocolate. Unbeatable!

Chocolate cherry ice cream sandwiches (~10)
1 pint vanilla ice cream, softened
1 cup dark sweet canned cherries
4 tablespoons butter
10 oz. bag of marshmallows
11 oz. box Cocoa Krispies
To make the ice cream portion, stir the cherries into the softened vanilla ice cream in a large freezer-safe bowl. Put the mixture back into the freezer to harden again.
Meanwhile make the "cookie" portion of the ice cream sandwiches. Melt the butter in a large pot. Add the marshmallows, stirring until the marshmallow completely melts. Add the Coca Krispies and stir everything to coat the cereal in the melted marshmallow.
Spray a 13 x 9 baking pan with non-stick cooking spray. Press the mixture evenly into the pan. Let cool.
Using a circular cookie cutter, cut circles out of the rice Krispie treats. Cut each circle in half. To serve, add a scoop of the cherry vanilla ice cream to one half of the Krispie treat. Top with another half, and dive in.
