This green goddess chicken lettuce wrap recipe is my absolute favorite take on chicken salad. It’s creamy, packed with herby flavor, and totally filling. Once you try roasted chicken salad once you won’t want to make it any other way too.

Green goddess chicken lettuce wraps

Ingredients:

  • 2 chicken breasts
  • 1/2 cup sour cream
  • 1 tablespoon mayo
  • 2 garlic cloves
  • 1 cup parsley
  • 1 handful of chives, plus more for garnish
  • 1 tablespoon lemon juice

Instructions:

  1. Pre-heat your oven to 400 degrees Fahrenheit.
  2. Salt and pepper your chicken breasts, then roast them in the oven for 20-25 minutes until cooked through.
  3. Meanwhile in a blender, blitz to combine the sour cream, mayo, garlic, parsley chives, and lemon juice. Season with salt and black pepper to taste.
  4. Once the chicken has roasted, cube the chicken into pieces and toss in the green goddess dressing to throughly coat the chicken.
  5. Serve the chicken in lettuce cups and top with more finely chopped chives plus any of your favorite vegetables.
