Leftover steakhouse sandwich

If you're like me + don't, then you'll want to do something creative with your leftovers.
In steps the reliable sandwich, but this one is a special one! This steak sandwich has a some of the best elements of a meal at a steakhouse: creamy blue cheese spread, fresh tomato, quick-pickled red onions + of course, steak! But it doesn't have the same price tag.
Now, you might not have steak leftovers often. I don't either! So this combination would work well with chicken, pork or even grilled vegetables. Regardless, enjoy this one!
Leftover steakhouse sandwich
1/4 red onion, thinly sliced
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
Pinch of salt
Pinch of sugar
2 oz. cream cheese
3 tablespoons blue cheese crumbles
Leftover steak, sliced
Tomato, sliced
Crusty white bread, sliced + toasted
Start by pickling the red onion. Combine the red onion, red wine vinegar + balsamic vinegar in a bowl. Mix in the pinches of salt + sugar. Let this rest in the fridge for as long as you'd like. This is great right away, but a few hours will break down the onions + make them softer/less spicy.
To make the blue cheese spread, combine the cream cheese and blue cheese crumbles in a food processor until smooth. If this mixture is too thick, you can add some milk or cream to smooth it out.
To assemble the sandwich, spread a swipe of the blue cheese spread on a slice of the toasty bread. Top this with a layer of steak, then a layer of tomato. Finish the sandwich off with some pickled red onion + another slice of bread, if desired.
