S'mores baked apples
I don't remember the first time I had a s'more, but I do know that any time I had the opportunity to make them I freaked out + was first to roast my marshmallow.
Most people don't cook with fire, despite it's allure. Take Patagonian chef Francis Mallmann. He builds fires on icy tundras, in the middle of forests + on boats if he has to. Many people cook in convection ovens + on electric stovetops--never encountering flames as they cook.
This is why roasting marshmallows is so thrilling. As the flames dance you watch a fluffy marshmallow turn charred + gooey. Add some milk chocolate + fresh graham crackers, you have the classic s'mores.
Today I wanted to share my take on the s'mores with a baked apple version. My childhood self would be disappointed in trying health up a s'mores, but take my word that I'm really just taking the apple off it's high horse of health for a moment.
This apple starts like a baked apple, in the oven with plenty of butter, but the similarities abruptly end there. The butter melts + browns in the oven, but then you fill the center with gingersnap cookies + dark chocolate. Then you top the whole thing with marshmallows + watch those roast too.
There are a few techniques for digging in, but my favorite is to split the whole apple apart + consume in slices. Warm, chocolatey, gingery + toasted marshmallowey slices.
S'mores baked apple
1 baking apple
2 tablespoons butter
3 gingersnap cookies, crushed
5 oz. dark chocolate
Handful of mini marshmallows
Preheat the oven to 350 degrees Fahrenheit. Line a baking dish with tin foil.
Using a sharp knife, carefully scoop out the core of the apple. Fill the apple with the butter + place in the baking dish. Bake the apple for 30 minutes in the oven.
Remove the apple from the oven. Add the gingersnap cookies + dark chocolate into the center of the apple, stirring to combine with the melted butter. Top the apple with the marshmallows.
Return the apple to the oven to toast the marshmallows. Watch this carefully! This will only take a minute or two.
Remove the apple from the oven. Eat warm, but be careful with that gooey filling!
