Arugula salad with lemon and candied pistachio
This salad is my take on my absolute favorite salad on the menu at Fortina, their arugula salad. It’s lemony, laced with crushed candies pistachios, and coated in a shower of freshly grated parmesan. I honestly don’t really know the secret to it’s magic but I suspect it lies somewhere in the dressing and oh yeah, that it’s covered in parm. While I don’t ever resist a trip to Fortina, this recipe holds me over between reservations.

Arugula salad with lemon and candied pistachios
Ingredients:
- 2 tablespoon olive oil
- 1 teaspoon honey
- 1 teaspoon mustard
- 1/2 lemon, juiced
- 2 cups arugula
- 2 tablespoons candied pistachios, finely chopped
- 2 tablespoons freshly-grated parmesan cheese
Instructions:
- First make the dressing, by shaking together the olive oil, honey, mustard, lemon juice, and pinches of salt and cracked black pepper.
- Toss the dressing in the arugula and pistachios and serve right away with plenty of freshly grated parmesan on top.
